I suppose anyone can really answer this, but I thought of Ed because I live in roughly the same area (Chippewa Falls, WI).
At any rate, I've been having a bit of trouble finding raw beef knuckle bones around here.
I can find smoked and cooked ones in just about every grocery store and pet store in EC/CF, but have yet to run across raw ones.
If anyone knows of any place in the area (Eau Claire, Chippewa Falls, Menomonie, etc..) that carries them, I'd be greatful for any leads. <img src="/ubbthreads/images/graemlins/smile.gif" alt="" />

Is there any "butcher shops" in the area, where they do their own butchering or cutting? I had the same problem. I live in a small town in Northern Wi., and although the grocery stores sometimes carry them, they are expensive! I finally found a place just up the road from us that has them and sells them for $1.75 for 5 big, meaty bones!
Another option might be to ask around and try to find someone who does their own butchering. I found a lady by accident...stopped in the library to make some copies...and she gave me bags of them FREE because they were getting ready to butcher again and wanted to get rid of them!
Right now I am having trouble finding chicken/turkey necks, and wings are over $1.00#, so have been feeding chicken hindquarters that I can get for $.38 cents #. If anyone has any ideas of where to check for chicken necks besides the local grocery, which doesn't have them, I would appreciate it.
