"Gourmet" meat shops aren't what you want. Think at the opposite end of the spectrum: a small, independent grocery store in an ethnic neighborhood.
African-Americans, Latinos and Asian immigrants all have their own grocery stores. And their meat counters are much more likely to have the oddball parts that raw feeders are looking for. If you don't have the ability to shop/store in bulk, then you need a place that regularly stocks and sells packages of cheap meat cuts and variety meats.
I get most of my 'dog food' from a restraunt wholesaler. But if I didn't have that resource...I might try some local restraunts & see if they might be willing to add onto their order for me.
I think that You really need to be able to buy 40-50lb cases of food to really do well price-wise, in most areas of the country. I pay 30 cents lb for fresh chicken necks & backs. 89 cents lb (in 10 lb chubs) for ground turkey/mixed white & dark. Ground beef in 10 lb chubs is $1.99 lb. I also occasionally get pork necks & heats & gizzards.
You can pick up other odds & ends of varity meats for rotation at the regular grocery. I get goat, buffalo a few times a month along with additional organ meats.
I get cans of sardines in spring water with no sodium added. Also canned mackeral in water. Mackeral is always in salted water so you need to rinse in many times to get rid of as much of the salt as possible before you feed it. I have picked up cans of mackeral in walmart at a pretty cheap price....less then the regular stores.
If you don't have the storage room....find a friend & split the cases of food, so that it will me a more managable amount for you.
Also be willing to travel a bit to get a good price. I travel an hour to get my meats. I only need to go every 3 months as I usuall pick up 200 lbs or more of meat at a time. But I would be willing to travel further for a good price if I needed to do so.
I may still be in La but staying with my parents until next summer so space will still be limited and time won't be too big of a deal, but I'll have to go through everything before I move again. If everything goes right, we will be moving to Michigan and will be renting a house so space and time will not be an issue.
I can give you some info about places in our area that may be better options for purchasing the types of meat products that you are seeking, and at reasonable prices. Will I see you tonight?
