I am almost embarrassed to say that Raine (my 2 year old Mal) had NEVER ever seen bitework until the end of January.
I always do a foundation of bitework and tracking with my young dogs, but I did not do this with Raine for lots of reasons (which are too lengthy to post here)
Anyway, she's a super nice dog and we have been having a blast in agility. I took her to see Michael Ellis and let her have her first chance to try biting sports. I have never taken an adult dog out to do bitework that has never at least watched or had some clue what was going on. I was kind of nervous at first but Michael is great and did just what she needed. If you can work with him, I highly recommend it!!!

you usalley start with legs with adoult dogs?
i personlly love to start with less slipary serface in the first bites for even better pushed inns (ifound slippery serface tend to make the dog pull out in the beginnig) but ican see how your helper uses its advantages to incorrage the push inn.
iwhould love to see more of her biteworks...

I don't usually start with legs, but I usually am imprinting for Schutzhund. I may play around in ringsport with her if I can find a decoy to work with.
We didn't have a choice but to work in the building, VERY cold outside in Wisconsin in January. Knowing this dog, and the fact that it was her first bitework, I think she would have pulled back no matter what the surface was.
She reminds me so much of my Jason pup (whom is 8 months old before she gets a bite her jaw chatters and she foams at the mouth like a rabies suspect :grin. Looks like a really nice dog. Raine has the same type of grip that mine has (she isn't going anywhere). Which ring sport (French or Mondio) are you planning to dabble in? The first USMRA nationals are coming up in March
