I chose the harness over the collar. My pup was 9 mos when he started bite training with a trainer and I felt the harness would be easier on him when he would yank and lunge, strain, and pull to get at the prey. Figured if it hurt his neck to get crazy for the prey item, he would hesitate and drive may diminish. I felt the collar would put too much pressure on his throat/neck, whereas the harness disperses the pressure through the chest much more evenly.
I assume when he gets to the point where he's attacking a decoy from a distance, when he's let loose to attack, the collar would be the way to go. Just assuming, as we're not there yet, but I see collars used in videos in those scenarios
As Sandy pointed out, if your dog pulls so hard that he's gasping for air and can't even bark, then go with the harness.
If the dog doesn't pull too much and you don't see the collar impairing his breathing in any way, then the collar can work just fine
Ed talks about this in one of his DVDs... I don't remember him mentioning any other factors to take into account. Maybe someone can come up with something else to consider.
Like Sandy, I started when she was 9 months old and she would and still does pull alot working in prey. I used a flat collar at first and the pressure on her throat from the pulling seemed to restrict her breathing -- which in turn effected her bark and bite. On the recommendation of our helper I went to a harness and that seems to have eliminated any drive building problems due to restricted breathing.
I imagine once I begin to introduce more obedience in bitework I could move to a flat collar. I have my eye on the flat collars with the handle so you still have some control.

I think mine's a Frabo, I don't remember for sure & it doesn't say. It looks a lot like the black one, but it doesn't have all the nice double stitching. Also the underneath strap is not adjustable on mine.
That's the one I bought. Sturdy, great leather, well made and no binding or pinching the dog anywhere. I'm very happy with it. It will probably last forever.

I should add that the leather is supple, not at all stiff.
