Our GSD is named Argus (nickname Lenco)and we are absolutely in love with him. He is a 2 year old, 95 pound, Red Sable from East German working lines. I have been a dog trainer for many years, but this is my first real experience with a Shepherd this driven to do something. He is so intelligent he keeps us on our toes.
Lenco came to us by chance. My sister and her husband owned one big male GSD who was protection trained and decided that they wanted to begin their own line. They imported an adult female from Germany who was pregnant upon arrival. The dog delivered six puppies.
My son's 11 year old shepherd had just passed away and he was heartbroken at the loss. After much discussion, I approached my sister about one of the puppies. She was happy to help us out. Argus came to live with us at 12 weeks of age and has been here ever since.
I have trained obedience dogs for many years, but feel that this big guy needs more to do. Several of his littermates work in law enforcement. I realize that he may now be too old to begin serious Schutzhund competition, but am looking at doing some tracking and other activities with him. We welcome any advice you are willing to share.
The photo below is of my son, Nick and Lenco resting at home. I will try to post another photo of him when we have time.

If it's the bite work you are worried about, nah he's not too old. If his genes are good, chances are he could do the sport. You should go to a schutzhund club - at the very least you'll have a good time!
