Casting eagles on wolves is pretty much the pinnacle of falconry - only the biggest (coincidentally, female goldens are used primarily, as they are larger than the males), most mature and well trained birds are used, and yes, they do get injured sometimes. The birds are trained to go straight for the head and neck of their victim, but it's not uncommon for them to loose toes. Birds with missing digits can usually still catch smaller prey and are often released into the wild.
Incredibly impressive anyhow. I just love the images of those hunters riding out on their sturdy little horses, sending out these enormous birds from their arms...

This type of hunting is done mostly in central Asia (Mongolia, Kazakhstan)... Wolves there are not considered an endangered species and are still highly persecuted by farmers, and hunters seeking pelts. There is actually a small tourism trade that specifically brings people out to these remote falconer tribes for spectacle... it may not be the most humane entertainment, but I'd take a swift kill by a giant eagle over poisoning, wiring jaws shut, or any number of more agonizing deaths that the locals might come up with.

I wouldn't call it entertainment either. Necessary evil, for the farmers, maybe. At least it's quick.
