if its one thing i've learned, once a dog learns to do this to his crate, you should go ahead and jump to drastic(instead of smaller steps), especially because of the damage your dog is doing to himself.
i would get a new crate(not wire, you can try plastic, combined with a muzzle), or even an aluminum dog box, something like a hunter would have in their truckbed.

YES to both. This is a bad situation, and it will only get worse.
Aluminum Dog Crates Aluminum crates are expensive, but work and I really think your only option now.
Wire Muzzle I linked to the Pit size, but there are others that are other sizes. These allow breathing and panting, but not chewing. A MUST if you don't get the crate above.

In the old days my grandfathers used wood crates/dogboxes. Properly constructed they're pretty indestructible. Combined with a basket muzzle I think it may suite your needs.
As much as I hate to mention it, is debarking allowed in your area? It's a band aide, and won't solve your issue but I do say go ahead if it means the dog actually gets to stay in it's home. In cases of high strung dogs who bark through the collars (odds are he is being stimmed even making the weird noise) sometimes it's all you can do.
I notice from your pictures, there does not seem to be anything inside the crate to occupy your dog. Have you tried leaving something with him like an Everlasting toy stuffed with frozen ground beef (or whatever he likes)?
I used to have a Manchester Terrier that had separation anxiety and aside from using a plastic crate (my friend's dog strangled itself in a wire crate) I gave him a toy stuffed with frozen peanut better before I left and stuck around the apartment for a bit until he was chomping away at it. Then, I would leave and at first he would throw tantrums, but after a while he would turn to his Kong and loudly chew on it. Also, in the beginning, I left the television on so he was never sure if I had left or not.
Surgery for barking? That's retarded, the dogs problem is separation. I'm sure they make aluminum crates in Aus. The dogs should be crated in different rooms, the severe dog should be in the basement in an aluminum crate ( the dog will easily chew through wood, look what it did to metal) so he can't see what's going on. If you're computer saavy, put a webcam down there and watch what's going on and do TONS of obedience with the dog along with TONS of excersize, that's what i would try,

For now, just take him with you till you can safely crate him, dogs can die trying to get out of the crate and also don't waste your money on plastic, that dog will be out of it in minutes!
