I normally buy Falcon's meat at Walmart (hamburger, chicken leg quarters, pork necks and turkey necks), but they only have chicken backs in packages of entire chickens cut up. They are not willing to order a case of just chicken backs - they can only order large quantities of what ever they already stock on the shelves. I can not find a chicken slaughter house near us, and our stock, although laying eggs very well - (YEAH!!) is not at the point of keeping us totally furnished with chicken meat.
Where do folks find just chicken backs??

Anyplace where they cut up their own.
Any butcher who cuts birds into the common 8-part cut (2 breast halves, two thighs, two wings, two drumsticks) has backs left from that cut. (Birds halved and quartered do not.)
(It can be called a 9-part or 10-part, too, if they include the back, or the back cut in half, in the pieces, but many butchers will say 8-part because those are the parts that people generally ask for and that are on display in the case.)
I would ask the meat guy at the supermarket or butcher shop. You often have to ask, but a few folks here have also seen them packaged as "soup parts." I can give you a photo so you'll recognize them if they are called "soup" or "stock" parts. Or do you know what they look like?
I recently asked the natural food store down the street and they are now saving up backs for me (of Smart Chicken!) for under $1 a pound.

(d) and (e) in that bottom photo show the back, from the skin side. It's are usually one piece; they are showing it cut in two.
Picture #5 shows the back too, shown from the skeleton side.
Kidneys are often attached.

You'll probably have to find a locally owned grocer.
If you can't find one then you might see if Wally World could give you a better deal on whole chickens.

In the past, I've ordered cases of backs and necks from the grocer. It was an OK system but I had to order ahead and hope they didn't screw up the order (which happened a lot).
Now I cut up whole chickens, which is readily available, easy to do, cheaper, and guarantees me good, meaty backs....much better than what I was getting pre-packaged.

I order 40lb cases of Backs and Nubs from my buddy that runs a restaurant for 45 cents/lb. The nubs are misc parts that didn't make grade. I was fresh, not frozen so easy to divide up. Restaurants use this stuff for stock.
My most recent order was thru a yahoo group. A person on there places an order once a month with a rest supply called UWP from WI and then we go pick up our stuff from her. I got 40lb case of frozen backs for 32 cents/lb.

My chicken backs have fronts too, they just have most of the breast meat removed (though not all). Is that weird? The turkey backs look just like the photo though.
I get my meat from a local natural, free-range poultry farm. My vet told me where to go. Our local Pet Food Warehouse also sells chicken backs, but they are more expensive there. They are also a good source of 'weird' meats, like green tripe and kangaroo.

.... They are also a good source of 'weird' meats, like ... kangaroo.
Not to start a new thread in here, but just a quick reminder always to reserve (never feed) some novel proteins for just in case of an allergy down the road.

I buy 40 lb boxes of fresh chicken backs & necks from a restaurant wholesale supply company. The backs & necks are $.30 lb. But this is CT. We are on the high end of prices for everything here. You should be able to do better in other states.

I get 40 pound boxes for $12.00 from a local meat wholesaler. That's 30 cents a pound. Chicken necks are almost twice as much.
If someone is charging you $1/lb for chicken backs, they are making a very healthy profit off of you. I would call around and tell them you are paying 30 cents a pound and ask them if they can match or beat that price. You're more likely to get the price you want that way if they think you're already paying it somewhere else.
