I recently adopted an 18mo GSD in May. His coat was absolutley beautiful. Shiny, black, no issues. I had to give him a bath about a month ago and since then he has blown out his coat, which I expected. But now, I hate to say it, he's quite the ugly looking dog. Last night, I noticed that when I was petting his back, the palm of my hand and fingers were completely white. It reminded me of white chaulk. I didn't see any large flakes coming from him, though, the flakes were very very small. He's on Solid Gold Wolf King and gets a capsule of 1000mg Fish Oil 2x a day. He doesn't itch nor does he seem affected by the grooming nightmare. I'm still doing some light grooming on him on his hind legs when I find tufts of fur sticking out.
Am I doing something wrong? Should I be doing something else? I've had double coated dogs before, but never had this issue with the white chualky substance.

That would mean I would give 8 grams of fish oil a day. Also 400 IU of Vitamin E, preferable with mixed tocopherols, but at least d-alpha and not dl-alpha.
You'll probably find that a therapeutic dose of fish oil for any dog except a small one is going to be pretty spendy in the form of gelcaps. You'll probably want to get liquid instead.
Do you have any idea about the chaulky stuff? Like I said before, Jago doesn't seem affected by it, no itching or licking. I'm a little confused about the whole blowing coat. I read that GSD's blow out 2x a year. It doesn't seem possible that in 6 or so months, he'll be blowing it out again. He'll have no hair! He was so fluffy when we got him. Even the neighbors questioned me about what were doing!

I'm not knowledgeable about the blowing-coat thing, but someone else will see that. (Mine doesn't seem to do that noticeably; maybe it's the mild climate here?)
The chalky residue might be regular old dander, but since you bathed him recently, I'm guessing dry skin.
I'd probably start the fish oil and E, and then bathe him again (not a people shampoo! Wrong pH!), continue the fish oil and E, and see what happens.
I know that I no longer ever see dry skin or flakes, and it's been years, with GSDs and others, since I found out about and started fish oil and E on everyone.
