I made a real easy blueberry pie a couple of months ago. Just some blueberries, a little lemon juice, a bit of sugar and some corstarch. Easy peasy and really yummy.
I love mincemeat pies.
The easy way is to buy a jar of filling and a ready made pie crust. Put filling in crust, cover with another crust, vent the top and bake as directed.
1 1/2 cup frozen or fresh cherries chopped
1 1/2 cup chopped apples
3/4 c sugar
1 tsp cinnamon
1/2 tsp nutmeg
3 TBS butter
2 pie crusts
Combine sugar, cinnamon and nutmeg in a cup. In unbaked pie crust place one layer cherries then apples, then sprinkle sugar/nutmeg/cinnamon mixture. Continue layers until all fruit is in crust. Dot with butter then top with crust and seal edges. Brush top crust with butter and sprinkle a small amount of sugar on top. Bake 30 - 40 min. at 350 degrees.

Oh my, leaf cookie cutters is way beyond me. Like the other guys, ready made pie shells and about 40 minutes of cooking. Nothing was finicky with mine but it did bubble over a bit so some oven cleaning. Next time I'll put a pan under it.
I am using pre made dough, and possibly canned filling..so I thought I might at least dress it up a little, it might hide the fact that I didn't know what on earth I was doing
Pies are simple, and not finicky. Pies don't raise like cakes, etc, so you just mix them up and bake them.
Another idea for a cherry/apple pie would be using dried cherries. Put them in a glass measuring cup and pour boiling water so their covered by 1/4 inch. Let them set for 15 minutes then add them to your apple pie recipe. You could do the same with dried cranberries, too.
A hint with fruit pies, put them in a hot oven about 375 degrees for 15 minutes, then turn it down to 325 for the remainder of the baking time. Your crust will get golden brown, but not over bake this way.

I have had apple pie with raisins in it, but the cherries sound like they would be yummy!
