Even with soft treats (roll over, hot dogs, Zuke's mini's) I have had my dog do the chocking thing - it happens when her drive is really high and she is not really focusing.
So I have also moved to using a tug to reward during these times.

For my one hoover dog who almost doesn't register the usual marker treat, I take a skillet and break whisked egg whites into it and cook the resultant sheet. Then I scissor it into very thin fettucini strips.
These are his "excitement" rewards. Too long to be unobserved, but no chewing required.
They do have to be refrigerated, but it takes about 12 seconds to cook up that thin sheet.
PS I don't have to pinch an end and dangle it to give it. It works fine to give it the same way as any normal treat, in my palm.

How do you handle the paste? I'm picturing a bag of goop and putting my finger in it - hey, wouldn't it be great to having something like an icing bag, you could give it a squeeze and a little lump would come out...

Actually, that's kind of how it comes. (It's a squirt tube, like toothpaste.)
I've used it but on my finger or palm as opposed to straight into the dog's mouth. The dogs would like a mouthful of it, though. But it seems to kinda put a "pause" in the action squirting it directly. A squirt ready in your palm is easy peasy.

The leftover smell goes away immediately with deodorant soap (like "Dial," "Tom's," "Irish Spring," etc.) on your hands or any soap followed by a cut lemon.
