Move into a brief marker training session with her right when you end the play. This will bring her drive down a bit...
I get that too, a little frustration that its done when he doesnt want it to be done. I finish with him in a down and I slowly, calmly pet him, then out the toy and put it in my pocket. Then I move away a little, tell him done, and just start walking.
Like Lynne said, I have to bring that drive down, but when I say done I don't want to do anything else but end it. I do really like that little trick of Ready, and Done. Its better then how I used Ready, before.

I had a similar problem with my ok release command when my boy was a pup. He'd jump on me and nibble.
I worked through it by having a handful of treats and release while lowering my cupped hands - he couldn't bite with his head down.
I'd try something like that, as you slip the tug in the pocket pull out some tasty treats or a big chewy treat... It'll take a couple of tries to get the timing right but it should work.
I would second Taniths reply.I hide tug, say All Done and at the same time offer a treat.He cottoned on to All Done meant food pretty quickly and now looks for it.It doesn't mean that he won't go ballistic a little later.but thats a GSD 7 months.
