Is your dog outside all day? A lot of times dogs dig out of boredom. Make sure you give them lots of play toys to keep them busy. I read in a book that you can either put a large rock in the place where they dig or fill up the hole with their own feces as they dislike digging in that. But I don't think that will stop her from digging new holes. If they are out all day, give them a bone to chew on to keep busy or some other form of entertainment. They are like kids and get bored.
BCs in particular need to be kept busy, they generally have tons of energy and drive. So, it certainly makes sense that a bored BC will go self employed, in your case, excavation seems to be the career choice. I agree completely about keeping her mentally and physically busy. What type of training plans do you have for your girl?
Puppies in particular are good at trying to find something to do. This is one reason I keep mine in a crate if I can not maintain an eye on them. If I am busy in the house I will put them in the crate, same at night or when I am not home. Left to their own devices they will all get in trouble.

I once saw this really nice setup someone did to keep their dogs busy while outsdie. They had a homemade seesaw for the dog to climb on, they took some old tires and halfway buried them to give the something to crawl under, a sandbox for them to dig in, but I think a really good one was they had a tug toy tied to a tree by a rope that the dog could play tug of war with.
Also, you can get those balls you can put treats in to keep her entertained. She will spend lots of time on those trying to get them out. My dog also likes a large ball he can push around (like a basketball). He keeps trying to bite it and in the process ends up pushing it all over the yard keeping him entertained.
Just some ideas for ya.....also the giggly-wiggly balls are nice.....
I feel that they key to stop the dog digging furthher is patience. Fill the holes up with faeces. They will dog more, jsut keep following them. Of course, if you catch them in the act it would be the perfect solution. But I had to chase a couple of dogs around for about 18 holes, and then they got the message.
Crates and Kennels are way cool. Not for very long though. Correct the digging with something yukky. I used Tobascco sauce on my last pup. Put two bottles in the loose dirt and re-filled the holes. Then I put 4 bags of sand in the back corner of the lot and took the pup over there to dig. Praise digging in the good sand spot. (Hide some goodies/toys in it that you find when first training digging.) Correct for digging in the bad spots every time you catch yer little bugger.
On long days away you can hide toys in the sand (let 'em see ya do it), leave chew toys out, and put handfulls of food/treats around the yard. (Don't let 'em see you do that.)
I have also rigged a squirrel cage that releases one live squirrel every hour for the hunting entertainment of the dog.
