"That'll do" is a call off, recall and a "we're done" all in one. Common herding term.
I use another herding term "With me" as a casual heel. If they stay withing 3-4 ft of me on either side or in back of me that's all I'm wanting with that command.

I started using "with me" as a casual heel and I thought I made it up!! Apparently, I am not that clever! Someone beat me to it!! LOL!
Sheepdog people use "that'll do" a decent amount in everyday life. It's pretty much a "we're/you're done with this so leave it alone and move on/come with me" Because once it's taught to bring a dog off sheep it should work anywhere.
I may be wrong, but I think I read somewhere that Patricia Mc Connell put "That'll do, Luke, that'll do" on her beloved Luke's grave marker. What better words to lie over a working dog's grave?
She writes about Luke a lot in "For the Love of a Dog" and I think that's where I read it.
