We go to a proffessional groomer about 3 or 4 times a year, for stripping and trimming. I also use a stripping knife (medium) at home, to be honest, when I remember - that may be once in a week or once in a month. And I do it until I get tired, whether I finish or not.
The coat is wiry and it grows fast. The undercoat also regenerates quickly. Really low shedding.
How often is hand stripping recommended?
Hand stripping is an 'as necessary' type of thing. If you get it all done at once then keep at it every day just a little here and a little there it will only be a few seconds every day.
That is how it worked for the terriers I have owned.
It can also depend on the individual coat. My Border Terrier dog's coat was just tidied up ocasionally. My Border Terrier bitches coat needs constant attention to keep her from looking like a Benji dog. I HATE people that call her a Benji dog. My broken coated JTR needs stripping 2-3 times a year.
