Von is the bare root of the german word "of" or "from".
Vom is a contraction. It's short for "von dem".
"Dem" is just the appropriate version of "der" or "das" when either one follows "von"...amongst other reasons.
And because the german words for breeding establishments tend to be masculine and neutral words (der and das, respectivly), one tends to see "vom" a great deal. But "von der_____" is not unheard of. That just means whatever follows "von" is a feminine word.

Der, Die, and Das, respectivly, all mean "the". Der Hund=The dog. Die Katze=The cat. Das Haus=The House. See, words are assigned grammatical genders. Der is masculine, Die is feminine, and Das is neuter. Why? They just are.
But...when these words follow certain kinds of words (like "von"), they do a switcheroo. Der=Dem, Die=Der, Das=Dem. Why? They just do.
Von will form a contraction with Dem...but not Der. Thus, vom.
So, to use the examples of breeders...
Nachbarschaft means neighborhood. It is a feminine word. Die Nachbarschaft.
Böse is an adjective. It means "bad, cruel, evil..."
If that's the name of someone's kennel, his dogs will be a product *of* that. They will be *from* that kennel.
Von der bösen Nachbarschaft.
Busecker Schloss. Schloss means castle. It's a neuter word. Das Schloss.
Vom Jacobiner Schloss.
Alter Fluss means "old river". Fluss is a masculine word.
