I have Catahoulas. I personally know of some breeders that do protection training with their dogs.
Catahoulas, however, work differently than the usual Sch breeds (GSD/mal). They are more independent, having been developed specifically for making their own decisions and doing their jobs apart from their handlers. So they would need a little more patience to train.
However they are extremely tough dogs (I swear they don't feel pain!) and naturally protective of their owners and property, so with training I think they make great "alternative" Schutzhund candidates. They have hound instincts, so tracking comes naturally, and they really love working.
For the OP though, if you really want to know what you'll be getting, I would guess that a young GSD (not a puppy) would be more what you are looking for.
I have Catahoulas as well, I'm not sure that ScH is the right way to go with them without TONS and TONS of patience and training. I have to agree with Angela though, they don't feel pain, and they are great at tracking. We've got one that can find and tree a cat in any farm or our yard.
