Sinful cows aside, there is something wrong. You are receiving bad meat. It just does not have that kind of stink. Truly.
Kidneys actually have a function that would give them a smell that many would not care for. Green tripe is something that was already in the process of what you might call "rotting" even before slaughter.
But heart ... unless it has gone bad, then it should not have that kind of "reeks" effect.
I've never smelled any stinky heart. Liver stinks, kidney stinks, not heart. Are you sure you're not getting kidneys labeled as heart?
Here's an olfactory test: Can you smell skunk if you drive past a dead one on the road?

LOL...Yes, I can. I can also smell them when they have a fight in my back yard and under my house and let off a few bombs.
I buy my beef heart from the grocery and honestly, I think the meat itself is fine. I'm not describing a rotten, meat-gone-bad smell. I just think heart does have a natural aroma that hits me the wrong way and turns my stomach. To each his own quirks :wink:
