The big advantage to on older dog is that you can have his hips/elbows prelimed with OFA or sent to the SV for certification. I would insist on xrays before the sale. On my older dogs starting at about 6 months, I have hips, elbows and spine xrayed by my vet and the digital copy is forwarded to the potential owner.
If you are planning on doing sport with the dog and don't have a lot of experience bring someone with you that does, preferably a teaching decoy type of person. Even an untrained dog they will be able to tell a lot about the dogs potential.
You want a confident, well socialized dog. I would take the dog by yourself to an unfamiliar area and see his reaction. Drop something loud and clattery and see how he reacts. I don't care if a dog reacts, I'm more concerned how quickly they recover.
