My wife's mother is Thai so every year we have a full Thai meal (her Mom used to own a Thai restaurant) in addition to the standard Haole fare of Turkey, Ham, mashed potatoes, stuffing, etc. A sample Thai menu:
Pad Thai noodles
Shrimp Spring rolls with pineapple/orange/hot pepper dipping sauce
Panang
Yellow, Red or Green Curry
Sumtum (green papaya salad)
Chicken satay
Lime/Chicken Salad
(and for me) Okinawan (purple) Sweet Potatoes (one of my favorite)
My favorite is a macaroni, cheese, and ham casserole. It's a comfort food with lots of cheese. I can't have it this year I'm leaving for Army boot camp in very early January and showing up overweight would really suck!

Since moving from South Texas to my current location, I miss fresh tamales more than anything. My wife traditionally makes Pesole during Christmas. I don't eat it, but it always means a good pork roast for me.
