Just as a follow-up, I took her to the vet yesterday and she's put on about 2.5 pounds over 2 weeks. The vet seemed to think that was about right, but we'd be doing another follow-up in a month to recheck.
I increased her feed from 2/3 cup THK 3x/day to 3/4cup THK 3x/day plus a chicken leg once per day (since that's what I have). She's leaving some of the THK in the bowl. So, I'll probably back it down to 2/3 cup THK and try to give her different RMB daily (though maybe not with each meal, i don't know).
The other thing is I've started giving her a Kong stuffed with meat. I got some chicken gizzards and livers at the same time as the legs. I popped those in my blender and made a nice patté to stuff in the kong. That's clearly adding to her food intake, so I'm trying to balance it all.
I'm actually encouraged she'll leave some of the THK in her bowl. It gives me an idea of when it's too much. Though I guess I can't always count on that? I don't know. I still have a lot of learning to do and experience to gain.
Does she seem to handle the chicken legs O.K.? Are you leaving the skin on?
For a raw diet, even using the base as THK, liver should only make up a small portion, 5-10%, of the diet. Personally, I make liver about 5% of the organ meat, with other organs making up the other 5%.
Too much new food and too much organ meat can also cause diarrhea, so be careful with how much liver and new food you are adding.
E.T.A. Freezing the meat in the kong makes it a little more difficult to get out too. Might buy you another minute of relaxation.

I guess a kong full of gizzards and livers is probably too much. It's not a cup full; maybe 2/3 a cup. That puts it around 15 - 20% of her daily intake if she has one a day. I guess I should mix it with something else before I fill her kong with gizzards and liver.

Sounds like she is just fine with her RMB's.
Since THK and RMB's are already balanced, I'd probably keep the liver at the lower end of the suggested amounts. If you ever decide to stop THK and start preparing all of the diet yourself, then liver can be brought up to its full suggested amount.
