He just came from outside now and made a hard poop. The last time he made it was at afternoon, water poop. Now he made a hard little stool wich is a very sudden change.
He whined when he made it. Is this normal? May be the bonne in the chicken necks that we gave him this morning and afternoon made it harder?!
Now i think we will fast him for 12 hours. Then what's the next step? If he keeps whining when making stools, what should we do?
I don't think it will be easy to find chicken backs here. I'll check it out.

Is his poop super hard and crumbly?
If so you can leave a little fat or skin on for the next meal. If that goes well for a day or so then it would probably be safe to add some extra chicken meat to the meals, too.
Just be sure that he has a few good poops before you add anything new. Even then, add the variety in slowly and in small amounts.
Today morning he made again hard stools. The collour was white and he whinned again when making it.
Right now he made a very weird thing. He started with hiccups and then released some white foam from his mouth. This happened after he was carried on the lap a little bit. Should i worry about it?
Anyway, the last stool was a normal brown one.
Just a little bit hard again and with some pieces of bonne in it. I think we need to add a little bit of fat, skin or meat in order to correct the racio between hard and soft components. Am i right?
Yes, i mean slight frothy vomiting. Is it normal in puppys? He was with empty stomach at that momment because of the 12 hours fasting.

Yes, the froth-vomit is kind of common with a no-food stomach in some dogs. You could stir some plain unsweetened yogurt and/or a little plain canned pumpkin (not pie filling) into the water.
I'd grab a piece of paper and tape it up by the door and record poop color, consistency, etc., just in case there are actually soft yellowish or tan ones (which can be a different problem, such as giardia).
And then yes, I'm with Michael about adjusting the meat-bone ratio until you see good logs:

Your plan for increasing the amount and THEN adding more meat or fat sounds great. Get the pup all the way on chicken with no problems and then move on to a different protein source.
It would be best to add small amounts of the new meat to a meal that the pup already does good on. Small amounts of the new, building up gradually. Just like you mentioned and adding the new meat to a tried and true chicken meal.
