I LOVE the book that Michael posted a link to. I recommend it and lend it to all of my friends/clients who are thinking about making a switch to raw.
The feedback I hear on this book is that it is easy to understand, simple to follow and writer has good humour so it keeps you interested.

Junior is doing very well for his raw diet and last night and this morning his poop is nice and form, so when can I leave the skin on the chicken back?
Last night I leave him by him self in living room with towel covered front of the crate, first he start howling then I came down stairs turn on the radio then the radio on then he sleep like a baby.
About the book and yes I will purchase it for my future reference.

Good to hear that Junior is doing good! I would say have about 4 days of good firm stools and you can start leaving on a bit more fat/skin on the backs. Just add slowly, and if you start to have loose stools, stop adding any more or back off slightly.
I can't remember Walter did you say that you could not find pure plain canned pumpkin? That is a good thing to have on hand, for times when you need to firm up a stool or if he gets a tad constipated too, about between a teaspoon to a tablespoon mixed in his food usually will help either situation.
You can also look for plain canned squash or plain sweet potatoes as well. If you can not find any of those, I would just cook a sweet potato and scoop out the insides and let it cool and add a small amount to his food for the same results.
It sounds like he is getting used to his crate, that is very good. In no time, he will come to love his crate as his quiet place to be comfortable and sleep. It just takes time.
One thing you can try also if he still cries, you can take an article of clothing that you have worn, like a T-shirt and place that in his crate with him. He will like having your scent close to him and that might make him feel more comforted too.

Me too. Fat and organ meats are the two things I take my time with when introducing them. It's true that many (probably most) dogs are fine with rapid additions, but as many of us can tell you, diarrhea and an inflamed gut are much easier and better to avoid than to fix.

Anyway, finally today my food supplier delivered my 16kg case chicken back, the good thing is it doesn't come with any skinon it and the bad thing is what should I do now after 4 days with good poop and I don't have chicken skin to feed him, can I add a little of ground beef with his meal instead of chicken skin?

Yes, you can. I might buy the not-very-lean ground beef, in fact (maybe the 80/20 to start, gradually going to the 70/30).
But I will check that: I'll look up later how much fat is lost by having all skinless backs and make sure about which ground beef would replace that fat long-term.
