Oh, and training a dog to poop while running is very difficult unless the dog is in a large team. So, you need to learn to read your dog's body language (hunched back, shorter stride, tail position out rather than up, head up rather than down and focused ahead) and be ready to stop. Running will often stimulate a dog to poop, even if they've already gone prior to the run.
Call me stupid but I didn't know you could train a dog to poop while running!
I think this is an awesome activity best done on a scooter rather than skates. Make sure you get a proper pulling harness from nooksack or other skijor/urban mushing place. You need a gang line with a shock absorber (bungee in the tow-line) and your own safety equipment. It's a great training opportunity (Gee, Haw, Whoa, Easy, GO!, On-by). With your dog already out front, you have a good start going. Do watch body language for pooping - running has the laxative effect. Feather the brakes on the scooter and start with short jaunts - no more than a mile at first, and build your dog's endurance slowly over time. Have fun and happy mushing!
