Scalloped Pineapple
4 cups fresh breadcrumbs
1 20 oz. can chunked or diced pineapple drained (I cut the chunked pieces in half)
3 eggs slightly beaten
2 cups sugar (yes, two cups)
1 cup melted butter (yep)
Toss drained pineapple w/bread crumbs. Place in a greased 2 qt. casserole. Combine remaining ingredients and pour over pineapple. Bake at 350 for 30 minutes.

I have seen this online and I was never sure about its role in the meal, even though it sounds like something I would LOVE. Most sites treat it as dessert, but then I see "as a side for ham," and I start wondering ....
This is a real true dessert, right? (I mean, marshmallow-topped sweet potatoes are referred to and served as a side dish, but they're not fooling me ... Is this like that?)
Or does the bread make it more side-dishy? Or more like bread pudding?
1\2 cup oleo or butter
1\4 cup sugar
1 1\2 tsp baking powder
1\2 cup evap milk
2 cups cream corn
2 eggs well beaten
1 tsp flour
Preheat oven to 350
Melt oleo in medium saucepan,stir in sugar and flour until well blended. Remove from heat. Gradually stir in milk.Add eggs and baking powder,mix well. Fold in corn. Turn into buttered 1 1\2 qt casserole. Bake 40 minutes or into golden brown on top and set in center.
An old recipe,easy to make and very tasty. Can be doubled and baked in a larger pan. Takes a little longer to cook.

Admittedly, this does not fall in the health food category... I make it once, maybe twice a year - Thanksgiving and sometimes at Christmas, so at least it is not something we do every Sunday with dinner... but it IS yummmmmmy.
Ok, dont laugh but how do you make fresh breadcrumbs? That recipe sounds really good but got lost on that ingredient - I'm usually the one in charge of making green bean casserole because of my lack of cooking skills so I might just surprise everyone tomorrow and bring along some pineapple surprise
