Graham Kerr (aka the Galloping Gourmet, back in the 60s) was the first chef I heard talk about the affinity cocoa has for deep rich tomato-based recipes, and yep, it has never failed me with the kind of tomato dish that simmers for ages.
It completely changes it from brightly acidic to deeply complex, so it's not right for every tomato sauce (like a quick-cooking fresh-tomato pasta sauce). But it's terrific in chili and in the kind of long-cooking red pasta sauce I love to make.
Yum. That happens to be what I had for supper tonight!
