As long as it thaws in the fridge there is no problem with re-freezing.
I will get started on making up the packages right away. I will thaw the whole week's worth of chicken carcass in the fridge and then make up the packages. I think you are right. This is going to be much easier than I thought.

Tickets are booked. We are flying out on Christmas Day, returning New Years Eve. After all of your sage advice, I'm sure they are going to have a great time! And yes, I am going to miss them, but I promise not to worry about them.

For the interest of closure, I am reporting in after our trip. We had a fantastic time, and I watched Leerburg videos on my laptop during the flight. My nephew took wonderful care of the dogs, and they were all in great shape when we got home.
It was great to have the break, I am noticing I am much more relaxed with my approach to the training. All in good time, we are learning together.
I strongly recommend a very simple arrangement: no off leash time, no training, enjoy the dogs! My nephew did run out of the veggie goop I had pre-mixed to be folded into the ground up thawed chicken carcass. My nephew managed to make a fresh batch following my instructions posted through Facebook.
One last comment. The fox terrier is easy to exercise because he is so ball obsessed he won't leave your side if there is a ball to be had, and he sticks like glue to the keeper of the ball. The shepherd x pup is another story, he isn't ready for off leash exercise without strong supervision. My nephew brought his bike down, and rode Jethro around the neighborhood to run off his excess energy. By the time we got home Jethro had a lot of bounce in him, but not out of control. The bike rides had really helped.
