Yes to Will and Tracy on brining! It's a PITA to fit that bucket in the fridge, but worth it!
My mother has always done this.
My brother and I got hooked on deep fried turkey years ago, it's kinda like the dangerous side of turkey preparation. You learn the first time not to skip "Dry the turkey really well" step!
When I lived in Florida I would brine in a cooler and just use ice with the brine to keep the turkey cold.
No need to do that now in Idaho, of course!
My brine is made up of this:
One or two gallons of chicken broth.
A handful of candied ginger
A tablespoon of black peppercorns
Four cloves of garlic, smashed
1 cup of brown sugar
1 cup of kosher salt
1/4 tsp. cayenne pepper
One Bay leaf
Mix all the ingredients together in large sauce pot and bring to a boil, then allow to cool to room temp. Cooling the mixture in your fridge would be ideal, or else and a few lbs. of ice to bring it to a cool temp, then add the turkey for at least eight hrs., with a full days soak to be better.
My brother-in-law brined a turkey last year, it was really juicy. It looked repulsive soaking away in there, though. I don't like to spend too much TIME with the carcass.
For Christmas-- we have roast beef on CHristmas Day, after the presents. On CHristmas Eve, we have oyster stew.

The cooler IS a great idea Will! But since I had never thought of that, and don't have room to do it in the fridge, I use the injector method. I make the brine and then use the meat syringe and inject it full of brine the night before. Then I put the turkey in a clean trash bag and stick in the fridge. Turns out really moist that way too.
We always have Roasted Pork roast with mashed potatoes and gravy on Christmas.
I love a fillet of beef and would happily have that on Christmas day, but my 20 year old going on 70 year old daughter is a stickler for tradition and would probably get a fit of the vapours and faint if I didn't get a turkey!
This year it's just her and me for christmas day - number one son is spending his first christmas with his girlfriend and her two young boys, we were invited but having done many christmas's with hyper young children, I graciously declined!
Sam and me will get up, nice long walk with the dogs, then into our onesies and eat and sleep the day away in front of the telly - bliss!
