I have found the following virtually foolproof, and it's the way I switch all adopted dogs from their old food:
I start with just white-meat chicken with no skin and the fat trimmed. If the dog is worried about the new texture, I buy ground turkey breast. (After that, the new taste trumps the suspicious texture, IME.) I give this with salmon oil and E only. Then I slowly (I mean adding no more than one new ingredient every three or more days) add the softer bones, the produce, the fat that comes on the bird, etc., etc. This is foolproof because every single item you add is added on its own, and any reaction will be obvious.
Also, I add smaller amounts of the things like fat, at first.
I see no reason not to go back and do this if you have maybe started a lot of ingredients at once and the dog has diarrhea.
I don't worry about a perfectly-balanced diet for those first few days ... it's balance over time I care about, as long as I am careful to get the appropriate bones into the meat diet ASAP.
This is also how I started with Millie, and we gradually worked up to the different kinds of meat she is eating now. I still trim the skin on the chicken (mostly because it's a whole bird and I kind of have to) but she has never had a problem with eating the skin. Is it common to "relapse"? Maybe I'll can the pork all together since that is what she has probably been eating the most of lately.
