This is getting a little off topic, but. . . there isn't any trick. The blade only works one way - flat ground side against the plate. Notch in plate fits in tab at bottom of outfeed end of hopper. That's it! Try putting the corkscrew, cutter and plate together outside the machine to see how they fit and then make sure that's the way they are when you insert them in the hopper and snug up the ring.

I have not retrieved the grinder from the basement. I remember when I did it that I thought it seemed hard to do it wrong. (and yet I found a way). Do you use the plate with the larger wholes? I will try tomorrow. That would be SO awesome if I got to grind my meat. I am also excited the butcher will do it for you.

I use a small natural foods store with a butcher. I have heard that the grinder has to be cleaned each time after poultry is done, so I think it makes a big difference whether you are a steady customer and whether you can call ahead and give the butcher time to do your order at his convenience.
I also learned (from one of the butchers) that "chili grind," which is much bigger than the ground beef people normally buy for hamburgers, etc., is faster and easier for the butcher to do. And it's more like what I want, anyway.... it's more like what you would get if you chopped it up.... so even the senior with dental challenges gets something kinda like RMBs.
I buy enough from them that they will wrap up the front end "as is," and grind the leg quarters (and just charge the regular whole-bird per-pound price), and even throw the organ meat into the ground part if I want.
So my advice is to ask, and to be clear that you can adapt to their schedule and that you are a steady customer.

I'm coming in on this late, and sort of skimmed this so I apologize if I am being repetitive.
I don't grind stuff for my dogs but many years ago I tried it....I found the best, easiest and least gunky way to do it was to grind the chicken partially frozen. If you thaw it and try to grind the fat, skin and everything get all clogged up in the blade.

You must have had an industrial-strength "breeder" model grinder. The one I have would do frozen, but I'd have to spend too much time getting the pieces small enough to fit in the intake.

I use the coarse plate. It's got about 18-20 3/8" holes.

"partially frozen" not frozen solid..... You can easily cut up partially frozen chicken parts with a knife or kitchen shears, I am a weenie and if I can do it, anyone can.
I can't remember the grinder I had but it was not any big industrial model...it was back in my pre Leerburg days and I only had a few dogs.
I really don't believe that most dogs need stuff (especially soft food like chicken) ground. We have an almost toothless old dog that does just fine with leg quarters.

I DID IT!!!!!
I got to say the semi frozen tip helped. After that I am not sure I know what I did wrong. Regardless I ground up my first chicken. Tomorrow a turkey.
Can you just give a dog a whole cornish game hen? They were on sale and my husband is away for two more days. HAHA.
Anyway yet again thanks

What size is your dog?
I give my 4 adult dogs (55 to 60lbs) a whole game hen, Max (90lbs) gets a whole one plus some muscle meat and Ember (19 wks) gets a half of one. I change meats all the time so they get the hens maybe twice a week. The other meal is organ meat and ground, yogurt, supplements, THK or veggie glop with fish.

Are you guys finding game hens at a reasonable price? I would love to have those, especially for my senior who came with dental issues and had a few pulled within his first week or so. He does great with the ribcage, but I get the legs ground.
I'm thinking that those little hens would be perfect.
And Michelle, GREAT! Cindy's tip (partly frozen) is something I am filing away in my brain for just in case I get that grinder for my b-day.
