I'm sure a Greyhound can probably beat a deer. But I know they don't have what it takes to bring one down alone.
Patrick, on the plains in the midwest, there are folks who use several greyhounds at a time to hunt coyotes. Trust me, they have what it takes to hunt deer in a pack - it's just not legal in most places to hunt deer with dogs.

you can use dogs to hunt deer in Virginia, Beagles being the breed of choice. I ask a hunter why short legged Beagles and he said you want them to chase the deer not catch them.
There is a tribe in Africa that uses persistence hunting, that is to say, they keep pressure on the hoofed animal until it is exhausted and heat stressed and then they walk up and calmly spear it.
I wonder if you could train a small pack of GSDs to do that for you
