If you are determined to do a GSD, do it now. I wouldn't start witha puppy when you have an infant or toddler. Get the hard part done while you have the time to commit to the dog.

ETA; Are you sure you wouldn't be happier with some other dog until the child is 4 or 5?

Hey Adi. I'd rather have a dog that I've trained and learned about for a couple of years when I bring the baby home. I really can't tell you anything about the dogs you're looking at, but what I think is that when you buy a dog, what you're really paying for is the knowledge of the breeder.
You've decided to put your trust in them when you tell them what you are looking for and what you're going to do with the dog. They should be able to tell you if thats what they breed.

You make the snapping-at-baby thing a non-factor, by controlling the dog's environment 100% of the time, as Ed says in the video. Control the dog, no interaction with babies, and no unsupervised interaction with older children.
I'm no where near as experienced as most of the people here but wanted to throw my 2 cents in. I have wanted a working dog for several years. I have to boys, 11 & 8. We got a rottie puppy las april. When talking to the breeder I explained that I wanted a dog with some drive but wasn't planning to do any real work with the dog. I pretty much got what I was looking for. He's got some drive but no where near the type of drive the dogs you're looking at have. I can tell you that even though my wife stays home and takes care of most of the kid stuff and even takes the dog out during the day to potty and some play time. He still requires a lot of play/training time every day from me. Doesn't matter if I'm sick, have a long day, whatever. His drive doesn't take a day off. And this isn't a super high drive dog. Be careful what you wish for. A dog like that is a lot of work.

Again Thank you Duane and Kory,
It's decided i have put on a deposit for a Congo x Fida puppy, Although i have asked the breeder to have a low drive dog with a stable temprement. I trust her judgement as she has been breeding GSD for atleast 30yrs. Thank you everyone.
