If you know of any local places that process deer/beef/pork you might be lucky enough to find a year round operation that does poultry. The local guy here only charged two dollars to dispatch and clean a full sized turkey, there were a few quills left but beats doing it yourself. I live in western PA and there are a lot of small packing operations that do poultry too.

Cindy, I know around me the Amish will butcher chickens for a small fee. I know you guys get your leashes from them, maybe they would be willing to do that for you as well, or at least know another family that might.
My dumb dog still won't eat rabbit, though. Only furry animals he'll eat is squirrel and deer.
The hide on makes the meal more engaging, too. Requiring gnawing and tearing that is good for helping clean the teeth.
You didn't ask, but I prefer a small caliber rifle over a shotgun for game that the dog or I will be eating.
Shot can be very easy to look over. For one, I would rather my dog not eat lead. 2ndly, my biggest worry would be chipping or breaking a tooth biting down on a piece of shot.
Tossing my $.02 into the hat about dispatching prey. I've been fresh feeding rats to my ball python for a few years. CO2 is an awesome way to deal with the dispatching. Put the hose a few inches from the top of the container until the animal passes out and then put the hose down to a few inches from the bottom. Wait 15 minutes and feed. My opinion is that it's more humane than any other method.
