Personally, I would wait on the leg quarters until your pups gums are not so sore. I would continue to feed the softest bones you can, like necks and backs for the time being. But this is all JMO.
You can take a wash cloth and wet it down, squeeze out the excess and roll it up like a log and freeze this. Give it to your pup to chew on while teething, it will help numb those sore gums.
If you already have perfect poops you can then start to integrate gizzards and see how he does. The liver is the one that can be tricky. Just remember the smaller the better until you see the normal looking stools.

The teething thing was the only concern of mine, but it being slightly frozen might just help him feel a little better

Kaiser LOVES ice cubes too! That seems to help with his swelling. He ate enough last night that his muzzle was finally feeling cool to the touch instead of very warm.
I might wait on the leg quarters, but he still is tolerating quite well the breasts with ribs.
I will go slow on the gizzards too.
