I don't have anything to add about the training, everyone summed it up pretty well - you could just about write a book with all the info!
I'll just comment on exercising a dog with joint issues and potential for arthritis. This might seem pretty obvious but anyway... You don't just want to minimise jarring of the joints, you also want to avoid quick turns if at all possible. Swimming is by far the best exercise she can get; building up the muscles in her legs will only do her good!
I had a GSD with hip issues, and now have a Husky with arthritis and luxating patellas. To keep them mentally satisfied I used to hide food all around the house and tell them to 'search' (Obviously not together). They would both literally go for about an hour - well after there were no treats left!
It's a terrible thing to have a Kelpie unable to be exercised properly. They're like Malinois' in many ways; they have such drive to work! But you might want to get Stella into some sheep herding if you can, it would be fun to watch

I plan to do exactly that!!!! Her breeder does herding trials with her working dogs so when Stella is a bit older I plan to find out how to train her for that.
