She said that it could be a combination of environmental and food and that "possibly" the ELISA would indicate which foods to avoid. That was her reason for suggesting blood testing.
I said I would prefer to try the antihistamine trial first...and take it from there. As soon as she mentioned the blood test and Eukanuba I knew I wasn't going back.
Where I will go, if this doesn't help, is to a derm vet, as you suggested.

Thanks for the links...all bookmarked to be read (and, in some cases, re-read) this weekend.
IF I end up going to the derm vet and IF she recommends an elimination diet I know I want to keep him on raw. I just can't put him back on bagged food.
The derm vet in this area is excellent but I know she'll suggest Hills or some other awful food. So I really, really hope we don't end up having to see her.

An elimination diet is an elimination diet. There is no allergy-related reason for the vet to insist on a canned one over a fresh one.

Yes, it certainly could be a combo. In that case, the ELISA test is so-so on ID-ing environmental and no good at food.
The ELISA plus elimination diet would be not-bad.
The intradermal tests plus the elimination diet is the best chance you have. And this vet did not recommend either one.
