Typically, yes.
Because they are a butcher shop, the chickens are likely to be from smaller, more local farms.
The chickens in the supermarket are from the very large, super-producers. Typically they are pumped full of saline to make them appear "plumper" in the supermarket display case.
Ask the butcher for chicken and turkey necks (for your pup, I'd only take HEN necks, not TOM turkey necks, which are obscenely large).
Chicken backs.
For now, that's all I'd feed.
Once he is eating necks and backs well, we can move on to the "rest" of the prey animal.

Okay! Thanks guys! I'll get back on when I return from the store. I should be able to figure out the portions from the articles you suggested. As far as the canned fish... how many cans make a meal for my little guy? And do I use that istead of the chicken or beef? Do I mix up his diet daily, weekly, monthly?

Slow down a little , and get him used to one type of food at a time. Chicken for now (easiest to get and feed) and add the fish later.
But it is a weight thing. It depends on the size of the can. Yes it can be a whole meal, but I don't unless it is a big 'ole trout. And even then, I sometimes have trouble getting them to eat it instead of roll in it. I'd use canned fish, later, as a supplement to a meal.

I would agree with Jessica - go slow to start. One thing at a time. He will most likley be on the backs and necks for at least 2 weeks to one month before introducing a different protein source.
We'll help - just go slow and follow our suggestions - you'll do fine!

If you are going to give canned fish, here are the caveats:
Ideally, it should be WHOLE fish, inclusive of skin and bone.
It should contain NO sodium or other additives. Just whole fish and water.
A can of Bumblebee Tuna does not a meal make.
I would focus on chicken right now.
Skinless necks and backs.

Got it!! Thanks! I just ordered a 40# box of necks and backs from the butcher. In the meantime I'll run up to WalMart and grab some wings to get him started...And anytime we have chicken I'll save the guts for Dublin. Since I fly all over I take my food with me. We have a Seal-a-Meal so I'll use it for Dublin's meals too!

Do not get wings yet.
Get some breast with the bone in. Then you'll cut off about 1/2 to 3/4 of the meat (use that for yourself) and then give the rest to the dog.

You can not use COOKED bones. You want RAW. The biochemical makeup of cooked bones is different from RAW and you do not want to feed cooked to your dog - they can splinter and puncture their insides. Raw is much better, more pliable and more easily digestible.
If you are talking about the heart and liver etc - yes you can save that - but don't give it to him just yet. First we need to get his system used to the new food. Later you'll introduce organ meats.

I'd forget that for right this minute.
One thing at a time, and the thing to start with is the poultry RMBs with the skin and fat removed for the first couple of meals.
You will never know what triggers any kind of digestive upset (like diarrhea) unless you start with one thing, see the poop, add the next thing, see the poop ....

Great info on his stool! I just got back from the store. I found chicken gizzards, etc and turkey necks. I also picked up chicken breasts with bone in. I got whole chicken so I can use it and give Dublin the neck, etc. I saw pork neck bones but didn't get any because I couldn't remember seeing it on any lists. I just took a turkey neck out and put it in his crate; HE IS CHOWING DOWN!!!! Also I weighed him, and he is 9 lbs! He still hates his crate and has accidents at night even though we get up a couple of times a night to take him out. So, I'm taking someone's advice on this site and he only eats in his crate. I put his turkey neck in there and closed the door on him. All he did was cry. As soon as I opened it, sat down next to the crate and showed him the turkey he started digging into it. Right now, I'm sitting right next to the crate because the door is open and he's only half way in. He keeps trying to bring it out, I tell him no and so here we sit. I hope that's okay for now...
