I used braised chopped kale, well drained (even pressed a bit in the colander) .... I'm pretty sure that any cooked "mess o' greens" would be fine.
I used a dense sturdy bread.
I can't wait to have this again.

Something I just recalled. There is a very old place down in the city called Crown Candy. Been there before I was born even.
The serve a MAGNIFICENT BLT with more then a half lb of bacon on it.
It's in the middle of a blown out neighborhood that doesn't have two houses per block anymore but they still do a crazy business.
With Easter coming they will have a line of people a half block long waiting to buy the home made candy. TONS of chocolate "stuff".
You guys are killing me. Can't wait to get home and break out the leftover pot roast with rosemary roasted potatoes and au jus. May even have to heat up some Texas Toast to go with it.. Of course, I'll be washing that down with some Luzianne sweet iced tea.

ETA: Greens for the maritimer - goose tongue, fiddlehead and samphires. Nothing much can beat those in my book
Do you know that I once read the results of a large survey of vegetarians about what meat they missed most, if any, and "bacon" won, hands down. I'm talking nothing else was even a close second.
I totally get that. I love BLTs. Luckily, I also love Fakin' Bacon, so I'm OK.
