It's funny, although I'm a gun nut, the best gift that my wonderful wife ever got me was a 6' conservatory Grand Piano last year.
Touching a great piano is like touching an old lover again. I went faaaar too long not playing and practicing everyday, and I'm glad I returned to it - I'm a better person for doing so.
My wife *reallY* knows how to choose gifts.
Must.....fight......the urge....to make..........free gift joke.......
That's interesting. . .I got an electric guitar once, and whenever I touched it, it sounded like there was a tractor in the house.
gee, i guess i'll have to open a bottle of wine then. it's a hard life.
thanks will! i'm actually really excited to see how it turns out! i found a musk ox meat site that says it's best at medium rare....is that pink and with some blood?
I can testify that Will's marinade recipe is really, really good and that the way to a man's heart is through his stomach.....and don't forget to light some candles!!! Since this is a family site that is all I will say.
Quick question should Will catch this before I go home and make the marinade.
Is the marinade an amount for one steak? Does it matter how much marinade/different ingredients in the marinade there are depending on the size of the cut?
If it helps, I got a steak-y cut (I forget what it is, they only had two types of musk ox cuts, and I got the one that was more meaty and able to be sold in smaller portions). It's 3/4 of a pound I think (was $35/lb, the cut I bought was $26).
They also said I should grill the meat, not braise it. But to still marinade it
Wow, I thought musk ox meat would be more expensive, but man was I happy they could sell the one piece in smaller portions, since otherwise I would've been paying like $70 for a hunk of meat, and massively blown my meal budget. On the bright side, it's wild musk ox, hunted, so it's not grain fed, which I'm happy about. I noticed their elk was farmed and grain fed....yech.

In case Will does not see it:
That amount of marinade would work for the 3/4 pound you bought. Seal it in the bag and turn it, as Will said. (Doing this can make smaller amounts of marinade go a longer way, BTW, as opposed to just turning the meat in a dish.)
Did you notice that Will suggested overnight marinating? This is for tomorrow?
For red meat, I'd recommend a minimum of a few hours of refrigerated marinating, and I'd prefer to do what Will said, which is to marinate overnight.
Will's recipe looks really good. I printed it out.
I can't wait to have someone ask me where I got the recipe and I will be able to say "On Leerburg."
