So.
The dog would have skinless fat-removed chicken backs and necks for a couple of days, and then you will look at his poops. (If they are very bony, the added muscle meat will still be poultry, so there is no question what food is in him for a couple of days: chicken and chicken bones.) Watch those poops.
Then you could leave on the skin and see those poops.
Then the fish oil and E.
Then maybe add some plain unsweetened yogurt with live cultures.
Then when he's had a couple of perfect poops, a little of another protein source could be added.
Then half of a chicken liver (or other organ), or, if the poops have been unfailingly perfect, even a whole one (one small piece).
And the reaction to all these added items will dictate to you how quickly you can add the next one. Most dogs do great on a big old mix all at once, but the ones who do not really and truly make it so worth your while to do it this way. The dog's bone-digesting enzymes get to kick in, the fat is not introduced fast enough to cause a temporary case of squats, and never do you have to make the dreaded food-switch diarrhea post.
And all this took under a week, if the dog is not sensitive-stomached.
Even if he is (and he probably is not), then it will take less than two weeks.
