Thanks for caring about us! The vet said it looks like Dub has an irritated large intestine possibly due to stress. He said to fast him for a day (but all the water he'll drink) then cook some gr. bf. or turkey. What do you think? Should I add some Probiotics? Should I fast him? Do I really need to cook the meat?

I would do exactly what the vet said (yes, including the fast), except that I'd mix the cooked (fat-removed) meat in with overcooked white rice (think soft and soupy for the overcooked rice).
Don't add anything.
Make sure that he drinks. If he does not, then you will want to make baited water. (This just means cook some fat-removed meat in water, remove the meat, and cool the water. The dog will like the smell and taste.)
I advise you STRENUOUSLY not to do anything at all different with his food until you see perfect poops. I am really begging you not to toss him some lamb bones or anything else until his gut is soothed and calmed, and that means that you see formed, solid, poops.
I would ask that you post back to describe his next poop.
