As for the switch, from my own recent experience, go slowly and take the skin off. Stick to chicken necks and backs and gradually add in other things. I wouldn't even do supplements until you know your dog is okay with the switch, with the exception of probiotics.
All of this advice I'm giving you is not a raw expert opinion...just sort of a translation of the expert's opinions that I've gotten here and my own experience.

i hear you guys talk alot about necks and backs (chicken)....
will chicken necks suffice? i have looked into my supplier here at work and i can get a 40# case of just necks for $7.00.....is there enough meat in them to justify feeding them? i know that they are good for stock b.c.o the bone content...but not sure if that is the only thing that i should feed...
i can also get an array of meat products...is there anything in particular that i should look for? like ribs, and th elike...veal, beef, lamb???
I would not rely on only one RMB source once you are comfortable feeding raw, like only chicken necks. At my house, I rotate between the following: ground turkey necks, chicken backs, and chicken thighs (and other things when available).
When I started raw, I chose one source - chicken - and fed about 50% muscle meat (chicken breasts) and 50% chicken backs. This balance helped my dogs from becoming constipated from only RMBs or loose from only muscle meat.
Now that I am further in, I use a lot more variety and try to make sure that no meat source (chicken, turkey, beef, etc.) is more than 50% of the overall diet. Example being last night's dog dinner - chicken thighs, some chicken backs, hamburger, and chicken liver...tonight's is turkey necks, beef chunks, and chicken liver.

A great all-natural topical treatment for demodex is Neem seed oil. You can get it from a health food store. It is a natural miticide and is used by organic gardeners. It also helps sooth your dog's skin and helps the healing process. Stinks to high heaven but it's great stuff. Good luck.
can i just buy some beef and lamb bones too? or is there a specific "cut" a lot of you guys are using?
also, on the chicken backs....are the ones that you all are feeding inclusive of the rib bones? they seem like some of the most puncture prone bones to feed.....
