Ok, I am going into my second week of Raw feeding, after starting the raw diet with only chicken backs for a week with no problems. I have read that I should begin slowly adding a vegetable glop... Should I also begin to add beef, muscle meats,
chix leg quarters, etc.? Or will I be fine with the backs for a while longer?

I would say your safe to start adding one ingredient at a time.
The veggie glop also. I would feed this separate from the meat meal for now. If you add organ meat first, that is okay to add to the veggie meal.
How old and what size (breed) is your dog?
I feed leg quarters to all but one of my dogs (she is a gulper). But only once or twice a week. The rest is made up of other chicken parts, turkey, beef, pork, fish and organ meat.

I use the baseline out of that book and then modify it whatever way I want to. I add canned salmon or mackerel to it and also a tablespoon or so of olive oil.
I feed veggies daily.
There are so many variations that you just have to play hit and miss until you come up with the best feeding plan for you and your dogs.

Chicken quarters should be fine, right away and have the benefit of more meat than the backs have, but you can stay with the backs as well if that is what you have.
You can add other meats one at a time now as well. As far as veg goes, this seems to be a personal desicion, how much veg (if any) and what types. I personally do not feed a tonne of veg and like to stick to the ones I feel are the most important-the leafy green ones. Blended spinich, and dark green lettuces are my favorite. I also sometimes add a bit of canned pure pumpkin. Here is a sample recepie of a meat/organ/veg mix I feed:
In a blender:
Couple eggs shells and all
Liver (beef) or organ of choice
juice from unsalted can of salmon/fish
dark green leafy veg like romaine lettuce (lots)
sometimes a little fuit (not too much as it hs a lot of sugar) berries, apple, banana
just enough water to make the mixture blend
In a bowl:
Some ground meat, I like to use a protien not part of my dog's RMB diet for variety (ground venison purchased in hunting season from a game butcher is my favorite and cheap!)
Canned raw PURE pumpkin
the canned fish unsalted for witch you used the water to blend above.
Now mix all ingredients togeather and scoop into ziploc baggies into meal size portions for your dog. Do a bunch at once and freeze the rest.
Remember if you can find raw green tripe that this is the most species appropriate veggie meal as well as having other benifits (the horrible smell to the human nose is a drawback though LOL)
I also feed meat only meals (muscle meat) alternated with bonier meals and this works for me (I feed twice a day). Remember that a meal of meat only may produce softer stools than that of a RMB meal, same goes for meals high in organ meat.
