It's all good and gravy, but she jumps so much when she gives it back and you have it in your hands, or she'll grab onto my arm when I start to swing it to throw. ( Which I tell her no, make her sit, and wait for me to throw. )
She doesn't jump on me anytime besides this, which I let her know I'm not happy about, 'nor does she put her mouth on me any other time than this.

Maybe you are rewarding the jumping by taking the toy and trying to throw it again before she is settled.
When I play fetch with my dogs, they have to bring the toy back and give it to me nicely (not calmly, but nicely), this means no pushing, shoving, jumping or grabbing at the toy once they release. The minute they do that, game over.
Make her sit when she comes to you with the toy in her mouth and do not throw the toy if she is jumping at you.
Unless I tell them to sit or down while I throw the toy, I don't care what they are doing as long as it does not involve touching me. My Lab just jumps as high as he can about 5 feet away while I am getting ready to throw the toy.........but he knows not to touch me or game is over.

Does she jump on you any other times when uninvited? If so, there may be a "lack of respect" issue happening. Nothing major, you just need to be firm that she not jump on you.
From what I remember, this dog is going to be a companion? and she is young also? Or am I thinking someone else?
I do invite my dogs to jump up on me once in awhile, but only when I say okay. But I first taught them not to jump at all and then used a clicker to invite them up.
Didn't take long to teach them that when invited something good and when not invited something not so good.
Not something I would recommend to everyone, but every once in awhile I just like to have them jump up and give them a big old rub on their sides and back, they love it too.

No, I stopped her jumping any other time, she used to be bad about it when she was a lot younger. But now, it's just when we're playing outside.
Yes, she's 8 months, she's just a pet dog for me.
Only time I let her to jump on me is when she jumps up onto the couch when I allow her up with me, which is usually just her flopping her legs onto mine, since that's all that can really fit into my lap anymore. Haha. ( i take naps with her on the couch during my lunch hour. )
