Thanks guys for all the replies! I feel much better about the leg quaters. I bought a whole young fryer last week when I was running out of her normal RMBs. I regret that I gave her everything but the leg quaters, I pretty much stripped them and tossed the bone. Now I know better. Seems as for bigger dogs (40lbs +?) it's better to cut them into at least halves and smaller dogs it's fine to feed them whole.
To cut or not is really up to you. I have a variety of dogs and I rarely cut anything. That being said I might choose a smaller piece for the smaller dog, but it has more to do with what they need to eat than the ability to chomp it up. Larger pieces encourage chewing as well. Hard to gulp large pieces.
Another good go-to when you are out of RMB's is to check to see if whole chickens are on sale. They seem to be about every-other week here. I cut off the breasts for me, the wings for the ugly little rat dog and then toss the rest to one of the big dogs. If you don't need to feed that much, you can cut it in half and get two meals out of it.
Leg quarters rule. In the wild I haven't seen any animals with knives cutting their pieces, lol. I feed them whole. When I get chicken I never cut them, I feed whole also. Great workout and great for their teeth!

I'm another whole leg quarter feeder - even too the beagle. My biggest issue with him is not what bones he's able to chomp, but his weight. (and he's much better on raw in that regard)
Mean time, by the good grace of a fellow Leerburg member, we've had the opporunity to feed some deer this season. It's cut up as best we all can - not cut by retail butchering standards. Here's what the dogs do. They enjoy their feast, and if any bones are too much for them, that bone is left behind in the crate the next day. No big deal if they chomped on it again or not. I either leave it, or throw it away. I have not had any problems with either decision so far.

I shot a deer this year specifically for dog food. (Turbo actually found it the next day after I had searched all night with no luck) I didn't skin it or nothin'. I cut the legs, head, neck, back straps, and spine/ribs off. Hide and all still attached. Easiest deer I have ever cleaned.
