I must be lucky then. I live about a 15 minute drive from a small slaughterhouse with a retail store attached to it. You can buy a whole or half goat, lamb or pig and a side of beef. For that much meat they will sell it to you wholesale, but for smaller cuts you'll pay the retail price.
Once or twice a year (sometimes more) I bought a whole lamb (can't beat lamb on the BBQ) and my dog reaped the benefits.
This place sells a lot of meat to the local grocery stores. Although I would drive an hour to get good meat, I don't have to.

I am lucky as well as we have a meat locker here in town. They are more than willing to save scraps and bones for me and also around Thanksgiving and Christmas they save all of the turkey necks and organs for me. I end up with half a freezer full of the stuff. Aside from the cattle we have butchered there when we need it.
The only thing they cannot give me is organs and tripe. It is against the law for them to let people have the organs (except for the liver, which they sell) and stomachs out of the cattle.

i was thinking of this thread b/c i went to the grocery store near my new house, and they label the chicken backs 'chicken bones'....it's a good thing i know what they look like now!
