If you can't catch the sample as it is uh... produced, you can allow it to soak into a clean white papertowel.
Call your vet and ask for their advice- they may have another (better) way, or may simply have you leave the dog there until they can catch a sample of their own.
When I worked for the vet, we used to have two people to do this. One would have the dog by the leash, and when he/she started to pee, the other person would stick a clean stainless steel bowl/food dish and catch it in mid-stream. You may even be able to do this by yourself, if your dog doesn't get too weirded out.

I use a stainless steel soup ladle....fits right in there and the dog doesn't even know it.....
