So we've been doing raw for a grand total of four days and it's going just great. I stopped trimming fat today and the poop looks good
Now, all he's been on is leg quarters, some yogurt, sardine oil and Vit E. When can I start adding in some organ meat? Or other protein sources? Obviously not right away, since it's only been a few days, but I want to know when I can start shopping for some new stuff... jeez, I must be losing it... who gets excited over buying livers and kidneys... hahaha. =)

When you have a couple of days of good poop with untrimmed RMBs, then you could add a little bit of organ meat. You could add the 5 to 10% that you plan to feed and back off if there is diarrhea, but I find it a lot easier (working with older dogs who have been on kibble for years) to do every addition gradually and just not trigger the diarrhea at all.
So go shopping for "new stuff" and break it down into tiny portions for the freezer. If the dog moves along at a good clip, then you can thaw two or three at a time.
Meaty RMBs, yogurt, fish oil and E ..... that to me is an excellent "starter kit." It's evident that you read carefully and work methodically!
