Tonight I gave my 9 month old a duck frame as her RMB's and there was quite a bit of excess fat so I discarded most of it and left just a little on. Did I do the right thing?

Either way, doesn't matter.
If its the glob that I'm thinking of, enough to fill up your palm, then yes remove it. Thats a lot of fat.
The amount of fat you can leave on will vary from dog to dog. You probably have a pretty good feel for what your dogs can handle. Obviously, too much fat can cause diarrhea.
Yes, that was me that got tripe recently. I don't have any direct experience with canned or freeze dried. A few people on here get canned. Either one should be good to start with. I'll have to look at the freeze dried. Can't think of hearing anybody use it, but that doesn't mean anything.

Thats kinda the picture I had in my head. Sounds like you know your dog well.
If you wanted, you could leave a teeny tiny amount of the fat you remove, then leave more and more until you know what was tolerated. Still, sounds like you did right. I probably would keep doing what you are doing.
My whole chickens and chicken backs come with a HUGE glob of fat that I remove, too.
