What are the benefits of feeding G.T? I like to give as much variety as posible but like to keep cost at least under $1/lb. Is it worth spending the extra money when dogs are doing well and enjoy all the foods already being fed?

GT is a food the canid would eat plenty of on his own..... it's the form in which he would eat most of his produce and it includes some good bacteria that would replenish his own gut when he ate others' guts. (Actually, he would eat parts of a large animal's, like say an ungulate's, guts, and not all of it, if there was plenty of accessible prey, but the part he ate would involve that lining with its "processed" produce. Small animals, like rabbits, etc., of course, he'd eat the whole thing, and not sort out the guts. )
Are you feeding small amounts of varied low-sugar produce and probiotics?
Its good stuff, don't get me wrong, but I don't think you'll notice any difference just by adding it to the menu.
I've always been curious about it. I've heard of people using it as the bulk of their dogs diet. Its complete, but I don't think its that complete. No food should be relied upon completely.
I feed it to one of my dogs everyday. She is sensitive to some foods, and tripe is one that I have found that she does well on. That said, I get it for free. Well, I have to do all the dirty work in getting it out of the barrel and packaging it. Far from free in my opinion, but definitely no impact on the wallet. That makes it a huge plus.
It is part of a ruminant, and ruminants are how our dog's ancestors and relatives made/make their livin'.
If I couldn't get it for free, I would probably still try to feed it once a week. Its part of the "whole". Maybe not necessary, but I want to have as much of the "whole" as I possibly can.
Get it if you can. If you can't, don't lose sleep. It is not essential.
